Salad for Breakfast?

Lately I have been on this giant salad kick! I used to get super bored of salad super fast. Why? Well I wasn't being creative! Suddenly I find myself craving salads all the time! It's actually strange...but I'm totally loving it!
Now when I said "craving" that was no exaggeration...this morning I woke up and after considering my breakfast options, I ended up deciding on a salad! A salad? For breakfast? Why not! People eat breakfast for dinner...I'm just the opposite I guess!


Bright Red Breakfast Salad

Ingredients
  • Leafy Greens
  • Red Peppers
  • Strawberries
  • Hemp Hearts
  • Raspberry Vinaigertte 
How To

It's a salad, so I can assure you that this how to isn't too complicated! Rinse the greens, slice up the peppers and strawberries. Throw it all together and top with the vinaigrette and hemp hearts! And lasty, enjoy!

Sunday Morning Snacking

 I woke up this morning craving something sweet! As soon as I opened the fridge...the jelly was eyeing me and I just couldn't resist! I've always love jelly, but for some reason I haven't had it in a while. So it was perfect for a Sunday morning treat! ...what some of you might call breakfast!
 Honestly, hemp hearts go great with almost anything! It really is mind blowing how delish those little seeds are and I just can't help but sprinkle them on anything and everything!
Mmmm easy & delish! Even the smoothie was a great addition, but you can never go wrong with a little blending action in the a.m.

Saturday Morning

This morning I am indulging in my (newly) favorite breakfast! I like to call it Oatmeal Fruit Pie! I always eat oatmeal, but I made this one totally differently and it is delish! :) Also, I’m answering a ton of your lovely questions on my Tumblr! So sorry it takes me a while to get through them! I’m working on it! :)
Oh and it’s Saturday morning everyone! This weekend is crazy because it’s basically my last full one! You know why? Next Sunday I’ll be driving down to my college orientation! Ahh! It’s so crazy that high schools almost over and I will be graduating this coming Thursday! Oh my goodness I can’t even begin to describe the combination of happiness, sadness, and nervousness I am experiencing!

Orange You Glad It's Sunday

This morning I woke up surprisingly earlier than my usual Sunday wake up at 10:30 in time to get ready for church. Today I was up and kicking at 8 am! …and even more surprisingly, I woke up yesterday at 7:30am! I’m a typical morning person, but weekends aren’t usually my best. However, I can assure you that waking up early on the weekends is amazing! You can savor the whole day! Why waste your days off right?
So this morning I had a pick me up smoothie that I like to call, Orange You Glad It’s Sunday, catchy right? Ironic though because there isn’t actually any “oranges” in it…but it’s named after the color…duh :)

Raw Vegan Chocolate Chip Cookie Dough Truffles

Cookie dough is one of my major guilty pleasures. I remember sneaking spoonfulls of Tollhouse dough whenever we were in the kitchen baking...it wasn't that I couldn't help myself, it's more that I didn't want to because it was so delicious! So once I started focusing on a vegan lifestyle it was obvious that I would have to make a delicious healthy recipe for cookie dough! Same flavor just tweaked and fixed to be healthier and vegan!

Well, I think I found the perfect combination of ingredients to savor my sweet tooth cravings! Honestly...there are only 5 ingredients and the cookies can take as little as 5 minutes if you go straight for the bowl and a spoon! However I prefer to roll them into little balls. Portion control ladies and gentlemen! If I sat down with the spoon...this treat would be gone in a second!
Riia’s Raw Vegan Chocolate Chip Cookie Dough Truffles

Ingredients:
  • 2/3 cup Raw Almonds
  • 1/3 cup Rolled Oats
  • 3 tbsp Organic Agave Nectar (or Raw Honey)
  • 1 tsp Vanilla Extract
  • Handful of Cacao Chips
How to:
In a food processor, blend almonds and oats. Once they reach the texture of flour, add in agave and vanilla. Blend until dough forms. If neccesary, add more agave. Mix in cacao chips with a spoon. Roll into little balls. Refridgerate. Enjoy! :)

The recipe is super simple and to the point! But I figured I'd add step by step photos to help give you all of visual of the simplicity!
Gather all 5 ingredients listed above. I know, I'm really pushing it on the ingredients...there are just so many!
Blend ingredients (except cacao chips!) in a food processor until the texture is floury or doughy. Make sure too scrap the sides so you get every last crumb!
Mix in the cacao chips with a spoon. Add as little or as many as you would like! This part is totally up to you :)
Scoop little spoonfuls of the batter into your hand and roll them into small balls. Sometimes they're stubborn and won't stick very well...but if you form it well enough it should work perfectly!
And you're done! I was able to make about 15 small truffles with just the ingredients listed above! Keep them in the fridge and dive in as soon as your sweet tooth kicks in! Or eat them all in one sitting...this isn't reccomended though!

Vegan Banana Cinnamon French Toast


Today I slept in a little too late to consider my "breakfast" a breakfast...it was more of an afternoon brunch! I'm not sure if it's the end of senior year causing late nights and early mornings, or the hustle bustle of balancing fitness, cooking, crafting, school, and a social life depriving me of sleep. Maybe it's all of the above? Thankfully I don't mind!
This morning I woke up craving my Wake Me Up Oatmeal, (which you can see here, here and here) however considering the numerous amount of times that I eat that as breakfast I figured I’d switch it up!
Apparently I don’t make that many Breakfast Recipes?!
I know…how could I forget about the most important meal of the day? I am depreiving all of you hungry followers the simple bliss of Vegan Breakfast!!
So rather than having something simple like…cereal, oatmeal, smoothie…etc. Why don’t I make a vegan…French Toast?!

 The ingredients for this were super simple! It reminded me of the vegan waffles I made, minus the load of oats! 

All you need is:
2 Large Ripe Bananas (sliced)
2/3 cup Vanilla Almond Milk
2 or 3 tsp Cinnamon
1 tsp Vanilla Extract
1 tbsp Hemp Hearts (optional)
Ezikiel Bread (as many slices needed)
Olive Oil (for pan)

Don't forget to also grease & heat a pan or griddle to a medium heat! I used a griddle at 300 degrees Fahrenheit. 
 Vanilla Almond Milk was used however you can always used unsweetened! Plus I totally recommended that you try making your own almond milk! It is the simplest thing you'll ever make...I promise! 

Once you get all those ingreidents together, take out your blender and blend the bananas, almond milk, cinnamon, vanilla extract, and hemp hearts until you reach a liquid texture! And then you'll just pour the batter into a bowl! 

Next you're going to soak the Ezikiel Bread in the batter. You want to make sure to really cover the whole bread, don't just dip it in...really dunk that bread in and cover it! Let it soak in the batter, I even took a fork and poked at it a little so it soaked into the holes!
Once the bread has soaked in all the batter, cook it on a greased griddle or pan at a medium heat. Don't turn the heat too high or the outside will burn, but the inside will be soggy. You want the bread to cook thoroughly!

Once they're all cooked and ready to eat, I love to top them with fresh fruit, hemp hearts, and Pure Maple Syrup...I think I just found a new favorite breakfast! :)



Vegan Banana Cinnamon French Toast

Ingredients:
  • 2 Large Bananas (sliced)
  • 2/3 cup Vanilla Almond Milk
  • 2 or 3 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 1 tbsp Hemp Hearts (optional)
  • Ezikiel Bread (as many slices needed)
  • Olive Oil (for pan)

How To:
  1. Heat a pan at a medium temperature & grease with some olive oil.
  2. In a blender blend bananas, vanilla almond milk, cinnamon, vanilla extract, and hemp hearts until you reach a liquid texture.
  3. Pour batter into bowl.
  4. Soak slices of Ezikiel Bread in the batter.
  5. Make sure bread is fully coated and place slices onto heated & greased pan.
  6. Cook at medium heat until bread is cooked and no longer soggy. (It may take a while too cook, but don’t turn up the heat or else you’ll burn the outside and have a soggy inside.)
  7. Once bread is cooked and cooled, enjoy!

Kale Spinach Banana Berry Smoothie

Recently I've been trying and failing to make the perfect green smoothie! Not too sharp...not too sweet! There were times when the smoothie would turn out brown and terrible or the times when more spinach would end up on the floor rather than the smoothie maker...it took multiple tries. However, thankfully I have finally found the combination that works the best for me! However, I think I finally found the perfect way to incorporate both spinach and kale into my beloved fruit smoothies! Delicious and nutritious!

Suddenly I find my self having one, sometimes two, green smoothies everyday! You can easily say that I've become obsessed! Trust me, it's not hard too when they taste so yummy!
 And believe me when I say yummy! The sweetness from the fruit really covers any sharp flavors the kale would've created! Forget about adding sugar to mask the veggies, I get all of my sugars from natural foods...like fruit!

Riia’s Kale Spinach Banana Berry Smoothie

Ingredients:
2 Handfuls Kale
1 Handful Mixed Berries
2 Handfuls Spinach
1 Banana
1 tbsp Hemp Hearts (optional)
1 tbsp Chia Seeds (optional)
A little Apple Juice (no added sugar)

How To:
Blend all ingredients & Enjoy! :)
