Raw Vegan Chocolate Chip Cookie Dough Truffles

Cookie dough is one of my major guilty pleasures. I remember sneaking spoonfulls of Tollhouse dough whenever we were in the kitchen baking...it wasn't that I couldn't help myself, it's more that I didn't want to because it was so delicious! So once I started focusing on a vegan lifestyle it was obvious that I would have to make a delicious healthy recipe for cookie dough! Same flavor just tweaked and fixed to be healthier and vegan!

Well, I think I found the perfect combination of ingredients to savor my sweet tooth cravings! Honestly...there are only 5 ingredients and the cookies can take as little as 5 minutes if you go straight for the bowl and a spoon! However I prefer to roll them into little balls. Portion control ladies and gentlemen! If I sat down with the spoon...this treat would be gone in a second!
Riia’s Raw Vegan Chocolate Chip Cookie Dough Truffles

Ingredients:
  • 2/3 cup Raw Almonds
  • 1/3 cup Rolled Oats
  • 3 tbsp Organic Agave Nectar (or Raw Honey)
  • 1 tsp Vanilla Extract
  • Handful of Cacao Chips
How to:
In a food processor, blend almonds and oats. Once they reach the texture of flour, add in agave and vanilla. Blend until dough forms. If neccesary, add more agave. Mix in cacao chips with a spoon. Roll into little balls. Refridgerate. Enjoy! :)

The recipe is super simple and to the point! But I figured I'd add step by step photos to help give you all of visual of the simplicity!
Gather all 5 ingredients listed above. I know, I'm really pushing it on the ingredients...there are just so many!
Blend ingredients (except cacao chips!) in a food processor until the texture is floury or doughy. Make sure too scrap the sides so you get every last crumb!
Mix in the cacao chips with a spoon. Add as little or as many as you would like! This part is totally up to you :)
Scoop little spoonfuls of the batter into your hand and roll them into small balls. Sometimes they're stubborn and won't stick very well...but if you form it well enough it should work perfectly!
And you're done! I was able to make about 15 small truffles with just the ingredients listed above! Keep them in the fridge and dive in as soon as your sweet tooth kicks in! Or eat them all in one sitting...this isn't reccomended though!
